Potato Vegetable Soup (1/25/2018)

This recipe is really fun because it combines different textures, flavors and colors.  The soup is warm and hearty, while the tofu is crunchy and chewy and the sauce adds a great zesty flavor.  You can enjoy this soup for lunch or dinner and it is especially comforting on those cold winter nights.

For different variations of the recipe, you can try various things like pulse blending to different consistencies, playing with amounts of ingredients or even air frying the tofu!

Instructions
Soup
  1. Sauté the onions until translucent.
  2. Add potatoes and water or broth and let everything cook until the potatoes are soft.
  3. Add peas and cook for about 5 minutes. Make sure to not overcook, otherwise the color will not be as vibrant.
  4. Transfer to a blender and blend until smooth. To maintain more texture, use an immersion blender.
Tofu Crumbles
  1. Make sure to press tofu until it crumbles. For the spices, feel free to change amounts to suit your palate.
  2. Heat up a pan with some water, add tofu and cajun spice. Cook until edges start to brown.
  3. Add lime juice, umami paste and add water as needed to keep from sticking and keep cooking until deep brown and crispy or approximately 15 minutes.
Red Sauce
  1. Combine all ingredients and mix together or blend.

Couscous with Radish and Bell Pepper Recipe

  1. Pour the boiling water over the couscous. Cover with a lid, and let sit for 20 minutes.
  2. Steam the radish greens in a steamer basket over about 1/2 inch of water for 2 minutes. Remove from heat, keep the lid on, and set aside.
  3. Once the couscous has absorbed all of the water, stir in olive oil, salt, lemon juice, and garlic powder. Add the veggies and radish greens and toss to combine. Serve warm, cold, or at room temp.

Instructions
  1. Combine first 4 ingredients in a pan and bring to a boil on medium heat.
  2. Cool 1 minute and add remaining ingredients.
  3. Stir well and drop by teaspoons onto waxed paper.
  4. Cool in freezer and serve cold.

Optional: Add in chopped nuts and or coconut flakes.
