Couscous with Radish and Bell Pepper Recipe

If you have never had Cous Cous, it is a type of pasta. Like other pasta, Cous Cous is made of wheat and the shape rather than long like spaghetti or round like elbows is small grain sized pieces. Cous Cous is fast and easy to make, it doesn’t even require boiling it or draining water.

Adding colorful vegetables to the dish adds not only color and appeals your eye, but also adds nutrients. Most importantly complex carbohydrates to slow glucose uptake and insulin release. Fiber acts as a probiotic to help maintain and support a healthy intestinal microbiome. Did you know that your gut bacteria use fiber as a type of habitat to grow and support your well-being? Your whole immune system is ultimately linked to your gut health which depends on Fiber. Your microbiome helps to digest food, create vitamins and also uptake vitamins and minerals.

Instructions
  1. Pour the boiling water over the couscous. Cover with a lid, and let sit for 20 minutes.
  2. Steam the radish greens in a steamer basket over about 1/2 inch of water for 2 minutes. Remove from heat, keep the lid on, and set aside.
  3. Once the couscous has absorbed all of the water, stir in olive oil, salt, lemon juice, and garlic powder. Add the veggies and radish greens and toss to combine. Serve warm, cold, or at room temp.
