  1. Sauté the onions until translucent.
  2. Add potatoes and water or broth and let everything cook until the potatoes are soft.
  3. Add peas and cook for about 5 minutes. Make sure to not overcook, otherwise the color will not be as vibrant.
  4. Transfer to a blender and blend until smooth. To maintain more texture, use an immersion blender.
Tofu Crumbles
  1. Make sure to press tofu until it crumbles. For the spices, feel free to change amounts to suit your palate.
  2. Heat up a pan with some water, add tofu and cajun spice. Cook until edges start to brown.
  3. Add lime juice, umami paste and add water as needed to keep from sticking and keep cooking until deep brown and crispy or approximately 15 minutes.
Red Sauce
  1. Combine all ingredients and mix together or blend.
